Grease a casserole dish with olive oil, then line it with a layer of sliced potatoes, then a layer of onions. Repeat until all have been used. Depending on the size of your dish, you might only have one layer, or you may have more.
Place the pork chops on top and drizzle a little olive oil over them. Roast at 350°F (175°C) for about 40 to 45 minutes, or until cooked through.
Meanwhile, melt the butter in a pan over medium heat. Sauté the cabbage until it softens, then remove from the heat and stir through the cream and fennel seeds. Season to taste.
